A solid bamboo or wood board can be a good low-plastic choice for daily prep. Do not buy bamboo-composite boards made with melamine-formaldehyde resin. They are a different material.

What the research says

A 2025 Scientific Reports study tested 120 commercial bamboo and wooden cutting boards for sodium pentachlorophenate, a wood preservative. It found measurable residues in 5 boards and migration into food during simulated use. A separate 2025 Food Chemistry: X study found that bamboo-based food-contact items can contain many migrant chemicals. One melamine-suspected item contained melamine and related compounds. FDA says melamine-formaldehyde tableware can release small amounts of melamine, especially with hot, acidic foods.

What to do at home

Look for solid bamboo, solid wood, or acacia. Avoid labels that say bamboo fiber, melamine, or composite. Wash after each food, dry fully, and replace boards with deep cracks or grooves.
